Rotel Chicken Enchilada
Casserole is one of my favorite dishes to make its quick, easy and very
delicious!
The next time you need to take something to a party why not make it a
mouthwatering Rotel Chicken Enchilada Casserole, they're so easy to
make and who doesn't love enchiladas. Because it's a Rotel
Chicken Enchilada Casserole you can preper it ahead of time
refrigerated and heat it up Right before you go to the party.
Another thing about enchiladas is it don't have to be a Rotel Chicken
Enchilada Casserole, there just so many types of enchiladas that you
can make like enchilada soup, enchilada pie, seafood,shrimp, cheese
onion, Guatemalan, sour cream verde chicken, vegetarian, spinach,
apple, beef, green chile chicken enchilada, turkey, creamy chicken,
Texas cheese enchiladas, sour cream chicken, low fat chicken, rotel
chicken, Mexican enchilada omelet, taco enchilada, enchiladas blancas.
It's just endless.
Rotel Chicken Enchilada Casserole
1 med. bag (tortilla chips)
1 (whole) chicken
1/2 (chopped) onion
1 can Rotel tomatoes and green chilies (chopped)
1 can of cream of (chicken soup)
1 can of cream of (mushroom soup)
1 lb. (box) Velveeta cheese
Boil your chicken then debone & skin it. Mix soups and green
chilies & tomatoes. Heat it up until mixture is warm. Put your
ingredients into a large long dish, starting with the tortilla chips,
then the chicken, then the soup mixture. Cut the cheese into pieces
& also put some on top of your soup mixture. Keep on layering,
ending with the cheese. Bake until its hot and bubbly at 350 degrees.
Sprinkle some chopped onion on each of the layers Enjoy!
